Blue Agave is located in a former stable from the 1800's in a two story building in Santa Barbara's Old Town.
The place has a timeless, lively and romantic atmosphere. Neal Crosbie, the chef opened it with friends in 1995 and now runs it with his wife Gabi.
Neal has characterized the cuisine as Continental Drift. It's evolution reflects a passion for country style cooking from around the world. Most menu items are in keeping with traditional regional recipes from the Mediterranean, the American Southwest, Mexico and Pacific Rim Countries. It is healthy food. Neal came to Santa Barbara to study organic farming in 1972 and most of the ingredients in the dishes are organically grown by local farmers, who have worked with the Agave for the past 12 years.
The food is sensual, robust and flavorful with high nutritional value. All items are prepared with fresh seasonal ingredients using healthy fats. All meats are free range and naturally raised. All fish are wild and fresh form the sea with the exception of shrimp which fortunately is farm raised. All menu items are prepared in the house and cooked to order.
Blue Agave is also a classic bar and is named after the plant "agave azul" from which tequila is made. Over 40 Tequillas and Mescals are featured and Margaritas are made to order with 100% Blue Agave Tequila and fresh squeezed lime juice. The Martinis are award wining and the wine and beer list is extensive and if possible organic. Of course, single malt scotches and every other classic liquor vie for space in this beautiful bar.
